Today it is raining cats and dogs out, and I just got a flood warning on my phone. I can hear the thunder and see the lightening out my window. My 2 year old is asleep and so there is nothing left for me to do today but build a small tent out of blankets in out living room, and eat peanut butter squares with my son. What a rough day making memories.
My friend was lucky enough to stumble upon this recipe at a Garage sale. The woman selling worked for the school district for many years and had this recipe... she was sharing the squares at her sale. I am so excited to share it with you, it is the yummiest version of peanut butter cups I have ever made. The best part? It can be made in less than 10 minutes and just needs a little extra time for the chocolate to set before serving.

1 Cube melted butter
1/2 cup + 2 Tablespoons Crunchy Peanut butter (regular non crunchy is fine too)
2 Scant cups Powdered Sugar
3/4 cups crushed Graham Crackers ( just mash some up in a zip lock bag with your rolling pin)
OR you can substitute 3/4 cups rice krispies instead of graham crackers (I almost like this better)

3/4 cup semi-sweet chocolate chips
Directions:
Melt butter and add peanut butter and stir until creamy.
Add powdered sugar and rice krispies or graham crackers. Mix all together until a dough is formed. Press into 8x8" pan.
Melt chocolate chips in microwave for about 30 seconds, stir and then melt again for another 20 seconds. Do not over heat or the chocolate will seiz.
Stir chocolate chips until a smooth chocolate topping appears. Spread on top of dough mixture and let sit until chocolate has set. I like to put mine in the fridge for a bit to speed up the process.
Cut into squares and watch them disappear!

This Recipe can be made GLUTEN FREE if you just replace the graham cracker crumbs with Gluten Free crumbs or use GF krispies..

ReplyDeleteNever heard of a "cube" of butter before... There are sticks that make up a pound, still not a cube though. It's rectangular. Are we sure it's one stick, as someone mentioned in another comment? I have another recipe and I thought it called for more. Thanks!
