Recipe: Sweet cherry pocket pies
Recipe source: Emmy in her Element
What you'll need:
1 can cherry pie filling
1 batch homemade pie dough or store bought dough
{For homemade dough you will need: 2/12 cups all purpose flour, 1 cup Crisco shortening, 1 teaspoon salt, and about 8 tablespoons ice water}
1 beaten egg
A heart shaped cookie cutter
Directions:
Mix 2 1/2 cups flour, 1 cup Crisco shortening, 1 teaspoon salt and cut with a fork. Now add 71/2-8 tablespoons ice water to mixture. Slowly incorporate together until a tender dough forms. Roll dough out on a floured countertop about 1/4 inch thick.
Now use a cookie cutter to cute heart shapes. Place one cherry with a little filling in the center of each heart. Top with another dough heart. Carefully press the edges of the heart together with fingers so filling cannot leak out. Crimp the edges by pressing down with a fork.
Brush with egg wash (one beaten egg). Use a sharp knife to add two vent slits to the tops of the hearts. Spray cookie sheet with pam and place hearts on it.
Bake in a 375 F oven for about 20 minutes or until lightly golden brown.
