Southwestern Taco Salad- a 15 minute dinner

 
 
If you are in need of a fast one pot wonder-ish kind of dish for dinner, look no further!
This salad can be made in a snap and it is simply delicious!
 

Recipe: Southwestern Taco Salad

Ingredients:
1 packet of chopped romaine lettuce
1 lb ground beef
1 packet taco bell taco seasoning
1 cucumber (peeled and chopped into chunks)
1 can of black beans
1 tomato sliced into bite sized pieces
1/2-3/4 cup fresh, canned or frozen corn
1/2-3/4 cup cheddar cheese (shredded)
Frito chips for garnish
 
Ranch dressing to top.
 
Directions:
 
In a fry pan, brown ground beef on medium heat. Add packet of taco bell seasoning with water as directed on packet.
Let meat cool to warm or room temperature.
In a large bowl add lettuce, cucumber, tomato, beans (I used about 3/4 of the can) corn, cheese and seasoned beef. Lightly toss together.
Now add Frito chips on top for garnish, let your guests dish up their salad and top with ranch dressing!
 
 
 
Note: Not a ground beef fan? I made a version for lunch with smoked turkey breast, it was delicious.
