15 minute Wonton Tacos

Ingredients:
1 avocado
1 lime
1 vine ripened tomato
Sour cream to top
Sour cream to top
A handful of chopped cilantro
2 tablespoons grated red onion
Shredded cheddar cheese
Ground beef (as much as you need depending on family size)
Taco seasoning
Wonton wrappers (found in the produce section of the grocery store)
Directions:
Brown ground beef in a skillet on medium until there is no pink. Add taco seasoning per package directions. (I use less than half a packet due to less ground beef for a small family). Drain grease.
Heat oven to 375 degrees and spray a cupcake tin with cooking spray.
Press wonton wrappers into pan and place a small amount of cheese in the bottom of each one. Top with about a tablespoon of ground beef and then another sprinkle of cheese.
Cook for 8 minutes or until golden.
Remove wontons from pan and top with sour cream, guacamole, grated red onion, lime, cilantro and tomatoes. Serve while warm.
I make my guacamole by....
Adding 1/2 a ripe avocado, a spoonful of sour cream, the juice of 1/2 a lime, salt to taste. Mash until combined.
